Tonight I decided to try making a Dutch baby. It is an easy to make, crispy fluffy baked heaven that tastes like a cross between French toast and lemon bar. It is best served warm dusted with powdered sugar, a light sprinkle of lemon juice, and some honey drizzled over it. I was surprised that it turned out so well! Put 2 Tbs. butter in a cast iron skillet and throw it in the oven set to 425 to melt. In a medium bowl mix 1/2 C. milk, 1/2 C. flour and 4 eggs. I added a tiny pinch of salt and a teeny tiny pinch of cinnamon. When the butter is melted pour your mixture in the pan and put it in to bake for 25 minutes. Leave it alone to do its magic and when your timer goes off it will be perfect. I found that enjoying a nice glass of wine, more Chariot Gypsy Red from Trader Joe’s helps keep me occupied in times like these. Remove the pan from the oven, sprinkle your creation with some powdered sugar, cut some lemon and sprinkle that over it, and drizzle a little honey on top. I cut ours
